I am pretty sure that the clocks in my apartment are working against me – making time pass quicker than normal. No matter how much I try to stretch out my days, darkness swallows Portland by 5 PM and my productivity levels drop. I’ve been busy though! Here are some highlights:
Tim and I went to watch a cyclo-cross race a few weeks ago (at the farm where we pick berries in the summertime). I am always amazed at the abilities of these riders. I especially love watching the women riders – they kick some serious butt!
Thanksgiving is often a quiet affair – just Tim and I at our apartment cooking and eating together (just like every other day!). This year, we stayed with our friends in Seattle and made a magnificent feast that left all of us too stuffed to do much more than play games and watch movies. Oh, and we squeezed in some time for breakfast at Mighty O Donuts (can’t live without ‘em!). We have actually contemplated moving to Seattle – I just need to find a job first…
I spent a majority of this past week cutting out hundreds of little red hearts and a considerable number of teal-colored cats. What for? I was asked to design some cards for the Teal Cat Project website! The proceeds from these cards will go directly to House of Dreams, a cat rescue shelter in Portland, OR. These cards are perfect for the holidays. Please consider purchasing some cards and helping some kitties who need extra love! I’ve also been updating my Etsy shop with new cards!
Tim and I took a road trip into central Oregon today and inhaled our fair share of waterfalls, rolling hills, and mountains. The sun was shining all day and we enjoyed a picnic lunch amongst curious birds and the sound of rushing water.
Lastly, I am working on writing a small cookzine with about 25 vegan recipes. I don’t know when it will be available yet, but I will be sure to let you know!

Yes, I realize misspelling “exciting” just to get away with an X-themed post is cheating, but it’s been a long day and I don’t know enough about xanthan gum for a proper X-themed post. Besides, giveaways are more fun!
My day has been incredibly relaxing. I did an hour of yoga on my living room floor and then singed some of my hair off when I got too close to the simmering pot of cranberry sauce on the stove (my hair fell onto the burner!). After dinner Tim and I played Scrabble (I won) and pretty soon we are making steamy mugs of hot chocolate! We need to save our energy for tomorrow’s annual Fur Free Friday march in downtown Portland. It’s a peaceful march protesting the sale of fur. This will be our third year attending and I love being amidst compassionate folks speaking out for the animals. If there is a Fur Free Friday march happening in your town, I encourage you to go.

…It’s on the street… And in my oven! Jeepers, it is HOT in Portland this weekend. I keep psyching myself up for cooler weather and then in rolls a heat wave. I have a system down for staying sane (cool) though. My essentials: (1) A spray bottle filled with water and kept in the fridge; (2) Lots and lots of cucumbers to eat; (3) a Japanese folding fan; (4) Barley iced tea; and (5) Window blinds pulled down and shut to keep out the melting heat. Of course, I suppose a trip to a cold river would be nice too (anybody want to teach me to swim?)!
Anyways, the heat in my oven was on this morning because I was baking another batch of brownies! This particular batch has been on my must-attempt-soon list and I finally got the necessary ingredients to give them a try:
Rice Crispy Treat Brownies!!! The recipe for these delightfully fudgy, chocolatey, crispy, gooey brownies will be in my book! I am stowing them in the freezer for a cold, sweet dessert after dinner.
In other funky-fresh news, I finally opened my Etsy shop! It took me forever and then some extra forever because I am admittedly lazy. My shop name is Chirp Cards and I make cards (primarily with an animal theme because I LOVE animals!)! Please take a peek and spread the word!
I even take custom orders for cards and will eventually be adding photography cards too!! Yay!
