I haven’t posted much about my brownie book lately. Writing a book that focuses on variations of only one dessert can become repetitive and boring. I am taking my time so that the allure of brownies remains exciting. Plus it’s easy to lose focus when the weather is warm, sunny, and welcoming! I created a new recipe this past week, and also retested an old favorite, making a few small adjustments.
Gluten-Free Banana Cream Pie Brownies – These treasures consist of a thick, fudgy brownie base topped with rich banana custard, coconut whipped cream, and frozen banana slices. There are plenty of healthy, wholesome ingredients in these brownies so there is no need to feel guilty for eating two. They received thumbs-up approval from my taste testers.
Chunky Cookie Brownies - I have made several variations of this brownie over the last seven months. I am the type of person who constantly changes a recipe until I am completely satisfied. And then once I am satisfied, I alter the recipe again because I change my mind! It’s a never-ending battle with brownie perfection. These sturdy brownies are studded with lots of crushed Newman O sandwich cookies. Extra cookies are smooshed into the top of the brownies right before baking. Two treats in one can be dangerous, but desserts are integral to our well-being so it’s okay.
I have plans for more brownie development in the next few weeks. I’m thinking PB&J Brownies and German Chocolate Brownies… What kind of brownies would YOU like to see? With the holidays approaching it might be nice to enjoy some indulgence you don’t have to bake yourself, right? I have been stuffing my freezer (and belly) with oodles of brownies over the last several months. As a result, the fudgy brownie and I are quickly becoming enemies (can you imagine?). Writing a vegan brownie cookbook is challenging. Eating batch after batch of brownies is downright crazy nonsense. I want to share some brownies! Are you interested? Good!

The final days of Vegan MoFo 2010 have been snapping at my ankles. I am pretty excited to take a short break from blogging. Although I will probably miss the routine, other things are (pleasantly) consuming my time. If you’ve been reading my blog, you will know that I am writing a vegan brownie book tentatively called Brownie Wonderland. My usually tidy kitchen is covered with cocoa, flour, vanilla extract stains, and melted chocolate (not to mention piles of dirty mixing bowls, measuring cups, and spoons). I have recipes written on loose sheets of paper scattered from the kitchen to the bedroom. I am losing my neat-freak tendencies!!! Tim has voluntarily started sweeping the kitchen every morning in an effort to keep me sane.

…It’s on the street… And in my oven! Jeepers, it is HOT in Portland this weekend. I keep psyching myself up for cooler weather and then in rolls a heat wave. I have a system down for staying sane (cool) though. My essentials: (1) A spray bottle filled with water and kept in the fridge; (2) Lots and lots of cucumbers to eat; (3) a Japanese folding fan; (4) Barley iced tea; and (5) Window blinds pulled down and shut to keep out the melting heat. Of course, I suppose a trip to a cold river would be nice too (anybody want to teach me to swim?)!
Anyways, the heat in my oven was on this morning because I was baking another batch of brownies! This particular batch has been on my must-attempt-soon list and I finally got the necessary ingredients to give them a try:
Rice Crispy Treat Brownies!!! The recipe for these delightfully fudgy, chocolatey, crispy, gooey brownies will be in my book! I am stowing them in the freezer for a cold, sweet dessert after dinner.
In other funky-fresh news, I finally opened my Etsy shop! It took me forever and then some extra forever because I am admittedly lazy. My shop name is Chirp Cards and I make cards (primarily with an animal theme because I LOVE animals!)! Please take a peek and spread the word!
I even take custom orders for cards and will eventually be adding photography cards too!! Yay!
