I’ve been wondering what to do with my spaghetti squash. We do a similar braised green thing with polenta but maybe I’ll do this instead. It looks so good.
Honestly, I rarely cook from SB, but the recipes that I have made turned out really well. There is a nice variety of recipes in the book, but I wouldn’t recommend buying it since most of the stuff (granola, cake, burritos, rice/greens/grains, pastas… etc) can be found in other books. I’d happily send you the recipe for the squash if you are interested!

squash + greenz + pine nuts = yum! raisins sound really yummers in there, too. a little bits of sweet – mmmmmm!

I’m still trying to get used to spaghetti squash. It has a funky texture and I can’t really describe the taste. But holla to the greens!
