“S” is for Squash


Last week I picked up some gorgeous delicata squash at the farmers market a few blocks from my office. I placed them on top of my fridge with the intention of using them for a creamy soup. However, I found a recipe for roasted squash that really appealed to me, so the soup will have to wait! The recipe for Delicata Squash Stuffed with Cherry-Apple-Almond Couscous is in the Vegan Yum Yum cookbook and it is total comfort food. Tim and I served the squash with some garlickly Brussels sprouts fancied up in our cast iron skillet. It’s not even cold in Portland right now, but this meal made me wish it was.

  1. i don’t think a combination like delicata squash and brussels could be any more glorious! you’ve got two of my all-time favorites there, Amy. score! i’m gonna have to ask for the yum yum cookbook for christmas – everything looks so fantastic and all the recipes sound amazing.

    now i’ve got a mission to find a delicata squash this weekend & make it mine. muah ah ah ah ah ah!

  2. I’m really sorry that I’m on a cookbook buying moratorium right now. That squash looks so good, but no books until testing for new books is completed! I’ll have to live vicariously through the creations of others! Thanks!

  3. Squash and brussels? deliciouss
    We don’t have as many squash types in Brazil
    as you have in USA..but I really like it.
    I like squash, but I’m not a big fan of zuchini.
    In portuguese, squass=abóbora and zuchini= abobrinha,
    what would be like little squash.
    my favourite is the Kabocha Squash.
