
I am insanely fond of meals in bowls. To be more specific: grains, greens, tofu (tempeh, seitan, or beans work nicely too), and sauce – all nicely piled in a bowl and chopstick friendly. They are simple, well-balanced meals with versatility that can be enjoyed during any season. What’s not to love? In fact, Jessy and I have joked in the past about opening up a food cart that shares our love for Meals in Bowls (capitalized to show just how happy these food combinations make me) with everybody. Portland actually boasts quite a few carts already catering to my MIB needs, but it’s fun to dream (and remove myself from the dulling world of my office job)…
Our weekly meal plan almost always includes MIB. This week it was Grilled Pineapple Tofu with Nutty Greens over Rice; that’s a mouthful! And, it’s mighty delicious!!! The recipe is in Vegan Yum Yum, a cookbook packed full of gorgeous photos and creative recipes. Honestly, with all the new vegan cookbooks coming out (!!!!!), I am starting to wonder where to put them all. My kitchen shelves have room for a few more and then I might have to stow them in the closet or something similarly dreadful! For now, I will just worry about that later, if that makes any sense…
Tim and I loved this recipe so much that we had no leftovers. Brown rice is topped with nutty kale, baked tofu, grilled pineapples and a creamy coconut-pineapple sauce – it’s tropical and filling.

Mmm, this looks delicious, grilled pineapple is so tasty. My MIB creations usually involve some sort of peanut sauce, but I might have to branch out and make this recipe! :) -Eve

meals in bowls are so comforting. and that recipe sounds delicious! it’s funny, i was just marvelling at the vegan cookbook shelf in borders the other week with michael. i had no idea so many new ones had come out! i ended up settling on the urban vegan one, but it was such a tough choice!

I have a “food in bowls” category on my blog. My favorite is leftover beans, rice, and greens covered in cheesy sauce.
MIB are the best! I love a simple brown rice/smoked tofu/veggie combo. But that grilled pineapple tofu bowl looks phenomenal. I’m waiting to see if my boyfriend or friends buy me Vegan Yum Yum for my birthday (or if anyone gives me birthday money), and if not I’m hitting up Amazon asap.

superdoublehooray for meals in bowls! you know how much i love ‘em, too! our Meals in Bowls food cart would be the absolute best – now i just need to convince dan to more to Portland! yay! i would have never thought to combine pineapple with greens and rice – i’ve gotta try this out! glad i’m not the only one with a vegan cookbook take-over going on in our home. makes me so happyfaced though! you know a recipe rocks when you don’t have any leftovers. mmmmmmm!

i tested a delicata squash recipe for isa just two days ago and it got me so excited for the fall weather and holidays ahead! i think it made me put delicata on my top 3 squash list.
