Jam Time and Other Fun Stuff

This is my very first post! Yay! I made raspberry jam over the weekend with some berries I had picked last summer. I am slowly making more space in my freezer, until this summer’s berry picking season begins…

I also made some cupcakes. These are the S’mores Cupcakes from Vegan Cupcakes Take Over the World (of course!). The molasses and cinnamon in these cupcakes gave them a subtle spiciness…they were yummy, and did not last long at all. My decorating skills need a bit of work, and I didn’t have quite enough frosting because I ate most of it with my fingers…

I do¬† like veggies as well, so I made an udon noodle bowl with kale, mushrooms, roasted red pepper, and a miso broth. The recipe for this tasty meal came from Veganomicon. Instead of onions, I used the red pepper, because onions creep me out. I am slllooooooooowwwwlllly learning to eat a bit of onion here and there…

My next post might just have a cookie recipe…maybe.

    For my flower cupcakes, I actually used fondant (I bought it at the craft store, Michaels). I don’t see any un-vegan ingredients on the fondant package, but I take the fondant off before eating my cupcakes anyway because I don’t like the taste of it. But it’s so much fun to use– it’s like edible clay!

    I have been wanting to make those smores cupcakes forever. What kind of graham crackers did you use? And your decorating skills looks great to me!
    It took me awhile to like onion. Which really only happened since I became vegan. I started slowly, with things like shallots and green onions (milder) but am happy to say that I now frequently put whole yellow onions in my recipes!! It just takes a little time…

    Thanks for the comments! I used Health Valley Amaranth graham crackers for the s’mores cupcakes. I still can’t seem to find “regular-sized” vegan graham crackers…I might resort to making my own!

  5. That cupcake looks so good, its otherworldly. Wow. Udon noodles are so fun! My problem with onions is that I like them, but they give me stinky breath and a gross feeling on my teeth after I eat them. So it’s probably best that you avoid them…
